See for yourself this Thursday morning on VTV Breakfast & Saturday from 11:00 am to 3:00 pm at the Grand Opening of Sears  Brentwood in the small appliance department

Power Tools in The Kitchen

Black Bean and Chicken Quesadilla

(makes one serving)

10" (26cm) flour tortilla, pesto, sundried or plain flavour

1/2 cup (125 ml) refried black beans

1/2 boneless, skinless chicken breast, grilled & chilled

1/4 fresh mango, peeled and sliced

1/4 green bell pepper, cored & diced

1/4 red bell pepper, cored & sliced

3 tbsp. (45 ml) Monterey Jack Cheese with Jalapenos

1 tsp. (5 ml) cilantro, finely chopped

1/4 cup (50 ml ) tomato salsa

1/4 cup ( 50 ml ) sour cream

1. Lay Tortilla on flat surface. Using a thin spatula, spread black beans over one half of the tortilla.

2. Thinly slice chicken breast and arrange in an even layer over beans. Top with slices of mango, diced peppers; evenly sprinkle with cheese and cilantro. Fold bare half of tortilla over top of filling to form a half circle.

3. Heat a non-stick wide skillet until a drop of water sizzles when dropped in the pan. Slide tortilla into pan and heat over medium high until golden on the under side.

4. Place a plate over top of skillet and flip tortilla upside down onto plate. Slide into pan and heat tortilla until lightly browned on the reverse side.

5. Slice into four even-sized wedges and serve with dollops of salsa and sour cream.
